Avidin is a glycoprotein present in egg whites. It can bind biotin, the vitamin B7 or vitamin H, very effectively.

When we cook the eggs avidin is deactivated in the same way as other proteins in the egg white. Eating too many raw egg whites can cause biotin deficiency. But, the egg yolk contains lot of biotin and it is one of the richest foods for biotin. This means you can eat the whole egg raw and be healthy.

Biotin deficiency can cause hair loss, skin problems, neurological problems and Conjunctivitis, the inflammation or infection of the lining of inner side of the eyelid.

Still you must remember the severe Salmonella infection and it is advisable to cook and eat the eggs.
