Look at the television advertisements. Calcium and vitamin D is the must for women. Is it right? Think of your teeth and bones. Take calcium and vitamin D. I know many women who take it. They are afraid of osteoporosis. We need most of the vitamins in very small quantities. Vitamins are like pesticides. They are not dangerous in small amounts, but very dangerous in high amounts.

Take for example vitamin D. You can get enough from milk, dairy products, fish and sunlight. In small quantities vitamin D protects from cancer. If we take too much it is a risk factor for pancreatic cancer. Very high amounts of vitamin D can damage kidneys.

This is the reason why I tell you to be careful with vitamin supplements. We know about pure synthetic beta carotene. In smokers beta-carotene increases the risk of lung cancer.

Excess vitamin A can cause jaundice.

Excess vitamin C can cause kidney stones. It cannot be an antioxidant it can be a pro-oxidant. Never forget in nature in fruits we have not only the vitamins but also several other phytochemicals that are very important for our health.

Excess vitamin E can make problems with blood clotting.

What is my advice then? Vitamins are very important for our health. But they must come from our food and not as supplements.

Consult with your dietician and he could tell you whether you need a vitamin supplement or not. Even if you need a vitamin supplement you must take it only for a particular time. Slowly you must change your food habits so that you get yyou get your vitamins from your food.

If you need counseling come to me and we see what do you need and what not. It is very bad if the industry makes its billions and you have health problems.

I have estimated thousands of blood samples. Mostly we have seen deficits in vitamin B1, B6, B12 and folic acid. We have never seen deficits in vitamin A or vitamin E or vitamin C.

This is a very good question. Fruits are very important for our health. 4 to 5 servings a day can reduce the risk of many diseases which kills hundreds of millions persons in our world. The examples are coronary heart diseases and cancer. The antioxidants present in the fruits are necessary for the detoxification of the body. Fruits play a vital role in scavenging the aggressive and dangerous oxygen and other free radicals. Many of us know this and even then not enough fruits are eaten. Others buy the costly frozen berries from a foreign country or spend huge amount of money to buy fruit powders or juices. Are they worthy for these high prices?

In our modern time we all have no time. We run the whole day and have no time even to think. The money is not the problem for many. These persons think in a different way. The advertisements in the modern media and the personal approach of persons who sell these costly products make them to think that costly products are good for their health. They buy these and regularly take them. Are they really as healthy as praised always?

Fruits are healthy not only because they have vitamin C and other antioxidants. There are more than 10000 phytochemicals are already identified from the fruits and every day new substances are identified. Fruits have good fiber. Therefore, eating the ripe fruits is the best for our health. There are tens of thousands of fruits in our world if we consider the different varieties too. Only the rainforests of South America has more than 3000 fruits. The Indians who live there eat more than 2000 fruits. But, the Western world eats only 200 fruits from there. All the fruits available in our world are not analyzed completely for their nutrients and non-nutrients as few of the fruits which are marketed for high prices.

Fruits are grown throughout the world. According to the climate we get different fruits. In the same country the tropical plains have different fruits than the high mountains with their mild or cold climate. It is possible to get everywhere fruits and it is better to eat these fruits. Some of these fruits are far better than the costly fruits and fruit products. If you eat fruit you can select according to their color. They are:

Red fruits – have nutrients such as ellagic acid, lycopene, quercetin and many others. These are good to lower blood pressure, reduce LDL-cholesterol levels, can scavenge free radicals and reduce the risk of prostate cancer. They have the power to reduce tumor growth.

Orange / yellow fruits – contain beta-carotene, flavonoids, lycopene, vitamin C, zeaxanthin and many others. These are good to lower blood pressure, reduce LDL-cholesterol levels, can scavenge free radicals, have anti aging properties and reduce the risk of prostate cancer. They help in the formation of collagen and healthy joints. It is useful to keep the body alkaline.

Green fruits – contain fiber, folic acid, vitamin C, lutein, beta-carotene, zeaxanthin and many others. These can reduce cancer risk, can lower blood pressure, reduce LDL-cholesterol and support digestion. They can boost immune system and good free radical scavengers.

Blue and purple fruits – contain resveratrol, lutein, fiber, flavonoids, ellagic acid, quercetin, zeaxanthin and many others. These help to lower blood pressure, lower LDL-cholesterol, can boost immune system, support digestion, can limit the activity of cancer cells and as such act as an anticarcinogens.

These nutrients can also activate natural killer cells and thus reduce the risk of breast, colon and prostate cancer. These balance the hormone levels and thus reducing the risk of hormone- related cancers. Banana, brown pears, white nectarines and white peaches are few in this group.

Eating the right and healthy food are very important for eye care. The food must contain the necessary vitamins, antioxidants and minerals. Eating the right foods can lower the risk of many eye diseases.

The important nutrients for eye health include:

Vitamin A is rich in liver, carrots, spinach, mango, cantaloupe and kale. Vitamin C is rich in papaya, green bell pepper, oranges and in other citrus fruits, broccoli, sweet potatoes and red chilli. Plant oils are rich in Vitamin E.

Brazil nuts, ground nuts and other tropical nuts contain lot of selenium. In countries where the soil is poor in selenium many foods are enriched with this important mineral. Meat, nuts, pulses and beans are rich in zinc.

This is a very important question, if we understand the relationship between these two lots of problems could be solved by us, I mean the iron deficiency.

We need vitamin C for the absorption of iron, so as also aluminium, moreover the transport protein is the same for iron and aluminium. That means if we have more aluminium in our meals, more aluminium is absorbed than iron and this can lead to iron deficiency, thus low haemoglobin values.

If we keep the aluminium levels in our food low and eat foods rich in iron and vitamin C, automatically more iron is absorbed and converted to haemoglobin. This is possible, if we know all the sources of aluminium in our food or also the contamination from aluminium cooking vessels and even from aluminium foils if you pack acidic foods directly in it.

Cucumber and tea are rich in aluminium. Think of rice cooker, the bowel there is aluminium so that our rice is quickly ready. Deodorants are also rich in aluminium which can enter our body through the skin.

The aluminium value of Indian human hair is found to be the highest in the world and I have examined approximately 250 Indian human hairs, most of them had low iron.

Our body needs iron to produce red blood cells and they are in charge of transporting oxygen to all cells in our body to produce energy. Less iron means less haemoglobin with many adverse effects, particularly not enough energy to carry out your day today work.

What is normal blood pressure?

Several countries have fixed this 140/90 and World health organization gives 160/95 and the values above these indicate high blood pressure. Blood pressure is an important marker of heart health and it keeps also the heart healthy.


Which vegetables and fruits maintain or reduce the blood pressure?

Celery is known to reduce the blood pressure, but it has more sodium than other vegetables which can increase the pressure. Take one to two stalks and this is enough for a day.

Garlic is also important to reduce the blood pressure and the mechanism is dilation of the arteries. Onion and garlic have adenosine which is a smooth muscle relaxant. Raw or cooked, both are effective to control the blood pressure.

Fibres and antioxidants of vegetables and fruits are capable of reducing the blood pressure. Comparatively the fibres and antioxidants of fruits are more effective than those of vegetables.

Which is the function of vitamin C and magnesium?

Vitamin C and magnesium are the substances which remove the waste in the arteries so that they do not become narrower. Both, we have to take along with food, since human beings cannot synthesize vitamin C in our body. However many animals can do it, that is why the animals have very rare or no heart attack. One or two oranges and one banana a day is enough to get both.

What about the plant oils?

Olive oil, sesame oil and all the oils which are rich in monounsaturated or omega-3 polyunsaturated fatty acids are good to reduce the blood pressure. But, intake of oils is very important. Complete avoidance of oil will lead to heath problems.

Coconut oil has almost 90% saturated fatty acids, but out of that 70% are middle and short chain fatty acids and these are healthy. It is not necessary to avoid completely coconut or coconut oil. Sesame oil, coconut oil and groundnut oils are the best oil for our Indian way of preparing meals. The reason is they are heat stable.

100 g of any oil has approximately 890 kcals and so you must be careful with the daily oil intake.

What role does calcium und potassium play in blood pressure?

Calcium is important to have normal blood pressure and it also functions as a natural diuretic to mild the effects of much sodium intake. Calcium supplement gives contradictory results, 80% benefit from the supplementation and 20% the blood pressure goes marginally up. Dairy products containing low fat and vegetables are also good sources of calcium. Talk to the dietician to know the position exactly.

What about coffee?

For 70 to 80% of the persons who have blood pressure we cannot find the reason. Mental stress is also an important factor for blood pressure. Coffee with mental pressure increases the blood pressure surely. Wait 45 minutes after drinking coffee, measure your blood pressure and find out whether coffee fits to your blood pressure or not. Two cups of medium strong coffee may be consumed daily.

What about the normal risks like overweight?

Overweight, smoking, mental stress and less physical activity are the big risks for high blood pressure. Too much drinking of alcohol is also a risk factor. Try to avoid all these risks and with correct food you can decrease the blood pressure.

What about tobacco and its products?

Tobacco and its products are harmful and should be avoided completely. This is applicable to passive smoking also. Never smoke in a room where non-smokers are there, particularly children and pregnant.

What about non-vegetarian food?

You can eat, but not too much. Eat meat without visible fat. Poultry without skin is better. One of the best meats is Turkey meat without skin. All meat from animals including milk has enough saturated fats and cholesterol. At the same time, all plant food has no cholesterol.

Never accept this argument – ear meat, but you must sacrifice coconut.

What about weight reduction?

Reduce the weight, it is always good for everything. Enough physical activities are a must.

Have you forgotten anything important?

Yes, you must drink lot of water, 3 l to 4 l in a cold country and 4 l to 6 l in a hot country. If you do lot of physical work and sweat much, then you must drink more than 6 l water. I mean, more than 6 l fluid intake per day and out of that at least 70% must be pure drinking water.

Iron is an essential element for human beings and is vital for the production of red blood cells. Haemoglobin present in the red blood cells transports oxygen to cells and carbon dioxide back to the lungs. Periods of rapid growth, blood loss due to menstruation or loss in the intestinal tract, less iron in the diet, poor iron absorption and poverty are the main reasons for the iron deficiency.

Healthy persons absorb about 5 to 10% of dietary iron and the iron deficient absorbs about 10 to 20%. Vitamin C enhances the absorption of iron. Oxalates, phytates and tannins from the vegetables decrease the absorption of iron. Therefore, iron is poorly absorbed from wheat germ, lima beans, spinach and beet greens.

Iron absorption from carrots, potatoes, beet roots, pumpkin, tomatoes, cauliflower, cabbage and turnips are good because these vegetables contain substantial amount of malic, citric or ascorbic acids which can help iron absorption. Iron absorption is enhanced by inclusion of red meat, poultry, fish and eggs.

Too much of calcium inhibits the absorption of iron so that calcium supplement should be taken in between two meals. Meals that include principally pizza, hamburger, spaghetti and cheese result in poor iron absorption.

An estimated 40% of world’s population, mainly women are the sufferers of iron deficiency. Environmental illness can cause iron deficiency. In India where hookworm disease is prevalent and vegetarianism is mandated by religion, iron deficiency is very common. Keep always in mind that too much of iron from the tablets deposited in the organs is more dangerous than light deficiency.

What is the reason that one should not take iron tablets for long time? Excess iron which could not be used for the production of red blood cells will be deposited in the heart and other organs. Our body temperature and enough water make it to rust there. In this process uncontrolled amounts of free radicals are formed by the Fenton’s reaction. Free radicals are necessary to fight and kill the bacteria and virus but too much of them destroy body’s healthy cells, thus the organs.

Iron is a poisonous metal and the iron tablets should be kept away from the reach of the children. Excess can harm the health of the children.

Plant food loses less Vitamin B6 than meat and milk during cooking. Milling reduces vitamin B6 and so white flour (Maida) has very little vitamin B6. All the processing techniques including freezing, cooking, canning etc. can make vitamin B6 loss.

• Meat and inner organs like liver, kidney etc.
• Nuts
• Beans and legumes
• Leafy vegetables
• It is present in all vegetables in small quantities and it is very difficult to take the necessary amount from the food or from raw food. The loss in cooking is always very high. Here we have to think about the supplement.

Food rich in Vitamin C

• Citrus fruits like oranges, grape fruit and lemon
• Vegetables with dark green leaves
• Broccoli
• Cauliflower
• Strawberries

The problem is in most countries the soil is poor in selenium and the local food contains almost no selenium. • Nuts including coconut
• Milk, yoghurt and cheese
• Meat

Fruits and vegetables contain only little zinc. The vegetarians must be careful in their food. Nuts, pulses and milk and dairy products may be the rich sources.

Seafood contains poisonous metals like mercury, cadmium, lead etc. and one must be careful to eat them.
