White wines are as good as red wines, but the anti-oxidants and polyphenols and flavonoids concentrations are low in white wine. The health benefit and the disadvantage of the alcohol are the same.
The nutrients in 100 g white wine, dry include:
• Water – 88.4 g
• Alcohol - 8.6 g
• Protein – 0.2 g
• Fat – nil
• Carbohydrates – 2.6 g
• Organic acids – Malic acid 355 mg, lactic acid 170 mg, citric acid 14 mg tartaric acid 140 mg,, oxalic acid 1.7 mg, Salicylic acid 0.63 mg
• Fibre – nil
• Minerals - 0.2 g – sodium 2 mg, potassium 80 mg, magnesium 10 mg, calcium 9 mg, iron 600 micro g, copper 70 micro g, zinc 230 micro g
• Vitamins - vitamins B1, B2, B6, nicotine amide, pantothenic acid, biotin, and folic acid – all are only in traces.
One glass white wine is good to reduce the blood pressure, but if you drink more the blood pressure increases. That is why never try to use alcohol to reduce the blood pressure.
The dose makes the poison.

The important tips for anti aging
Posted by
Dr. K. Padmanaban, Ph.D.
1:59 PM

Many think taking many supplements, using anti aging creams and eating some fruits and vegetables are enough for anti aging. No, we need more for anti aging.
The following are the important tips for anti aging:
• Enough physical activity
• Do not eat too much
• Eat food which contains lot of anti-oxidants
• Drink lot of water
• Select your food in such a way to get enough vitamins and minerals
• Enough sleep
• Be slim always
• Do not smoke
• Do not drink too much alcohol
• Eat less animal fat
• Reduce the amount of milk and diary products
• Take care of your skin and hair
• Train your brain always
• Avoid direct sunlight, if possible
• Take care of your eyes
• Drink tea, green is better than black, but both are good
• Have regular contact with your friends
• You must have hobbies
• Use the power of your sex hormones
• Enjoy your sex with your partner
• Reduce personal and office stress
• Do not believe in some wonder drugs or methods
• Your genes are also important here
• Support your detoxification system
• Eat proper food for free radical scavenging and these two are deciding factors
For anti aging you must start when you are young to achieve the best results. But it is never too late to start with.
Come for an online counselling and I give you a tailor-made proposal.
The mechanism of detoxification

The toxins get inside our body through the lungs, skin or from the food, environment etc. and most of them is not water soluble. These are very dangerous because our kidneys are not in a position to excrete them and must be made water soluble.
The first set of enzymes, the phase-1 enzymes, react with them and produce an intermediate product which is more poisonous than the original toxin. Moreover, these produce many free radicals which are also dangerous to our health. So in the phase-2 reaction, in a very rapid way the reduced glutathione present in our cells react with this to form a water soluble substance which could be excreted through the kidneys.
In this process the glutathione is got oxidised and in less than in a fraction of nano second time this should be reduced to the original state to bind the toxins from the next breath. Here comes the vital role of antioxidants which reduce the oxidised glutathione to the effective reduced glutathione and this is happening countless times in our body throughout our lives without a break. A break means certain death.
Fruits and vegetables have enough anti-oxidants. Right food is our health.

Grapes
Posted by
Dr. K. Padmanaban, Ph.D.
6:00 PM

Red or green grapes are healthy fruits. No problems to eat if you are healthy. But if you have diabetes, then you must reduce the amount drastically – allowed is only 2 to 5 pieces.
The nutrients in 100 g edible grapes include:
• Water – 81.1 g
• Protein – 0.7 g
• Fat – 0.3 g
• Carbohydrates – 15.2 g
• Organic acids 0.4 g – Malic acid 325 mg, Citric acid 25 mg, oxalic acid 8 mg, tartaric acid 530 mg, salicylic acid 1.4 mg
• Fibre – 1.6 g
• Minerals - 0.5 g – sodium 2 mg, potassium 195 mg, magnesium 8 mg, calcium 12 mg, iron 415 micro g, copper 95 micro g, zinc 50 micro g, selenium 2 micro g, iodide 1 micro g.
• Vitamins - vitamins A, B1, B6, nicotine amide, pantothenic acid, Biotin, folic acid, vitamin C – 4 mg, vitamins E, and K
• Purine – 25 mg
Grapes have many anti-oxidants and phyto-chemicals. Wine is one of the most consumed alcoholic drinks in the world. But, one glass is good to reduce the blood pressure. Large consumption increases the blood pressure because the blood vessels are narrowed from more alcohol. The dose makes the poison.
Resveratrol, the red substance from red grapes could reduce cholesterol.
Minerals, particularly selenium varies with their concentration in the soil.

Additives in Food Processing with their E numbers
Posted by
Dr. K. Padmanaban, Ph.D.
12:11 AM
What are additives?
Additives are normally natural, nature identical or artificial substances which are of little or no nutritional value, but are used in the processing or storage of foods as well as animal feeds. Additives are used for different purposes including keeping the food wholesome until it is eaten, make the food look or taste better, make that the food is easy to store or use and keep the price of the food competitive. In an emerging country like India, it is the other way. Though it is costlier than other countries people are ready to pay since these are considered as fashion food.
What are the different categories off additives?
The list is long and they are as follows:
1. Acids
2. Acidity regulators
3. Anti caking agents
4. Anti oxidants
5. Bulking agents
6. Carriers and carrier solvents
7. Colours
8. Emulsifiers
9. Emulsifying salts
10. Firming agents
11. Flavour enhancers
12. Flour treatment agents
13. Foaming agents
14. Gelling agents
15. Glazing agents
16. Humectants
17. Modified starches
18. Packaging gases
19. Preservatives
20. Propellants
21. Raising agents
22. Stabilizers
23. Sequestrants
24. Sweeteners
25. Thickeners
I have given the names of many chemicals used to give you an idea which chemicals are used. Be careful your processed food or soft drink or ready made soup can be a cocktail of chemicals. Avoid processed foods to your children.

If you are sure that any other E number apart from the above mentioned may be harmful to your child avoid it immediately. The hidden dangers are difficult to find out. For example, E 621 Monosodium Glutamate must be declared on the label, but if the hydrolysed form is used it is not necessary to declare although Monosodium Glutamate is used in this particular food. Talk to your dietician about this clearly.

There are more than 3,000 known chemicals used in the food processing industry and even if it is more it is impossible to find out because their analysis is not routine one and there are no standardised methods available. Uncontrolled amount of chemicals could enter the blood from the processed foods which can make problems to the mineral balance resulting problems for the metabolism and also the production of more free radicals which in turn cause more damage to our health. It is your duty to understand which is good and which is not so that uncontrolled processes could be controlled and you could only make the industry to think and produce safe and half-way natural food. The industry should not forget their responsibility and the health authorities must make stricter laws and regular controls for general health. The important duty lies in the hands of doctors, dieticians and scientists to inform the public with facts so that they know how to do and what to do correctly.

Cholesterol - Case Study
Posted by
Dr. K. Padmanaban, Ph.D.
6:07 PM
She went for a routine blood check up and the doctor told her that she had elevated cholesterol. She was astonished as well as shocked to hear this because according to her she had been leading a careful and healthy life. The reason of the high cholesterol level could not be diagnosed by her doctor. She went from one specialist to another and everywhere she had different opinions from the doctors, but without any result. Finally she came to me and we had an analysis of her whole life, regarding her job, where she lived, family medical history and also her food habits. As a single and successful young woman she never cooked, she bought only processed food, now and then fruits and salads and drank much coffee and coca cola. From this analysis we came to know that her body was deficient of vitamins, minerals and above all the so called anti-oxidants.
We need anti-oxidants for detoxification (the removal of toxins or poisons from the body) and to remove dangerous free radicals which can make us sick and old. We should get this only from our fresh food; since she was not at all taking enough fresh food she had deficiency in anti-oxidants. The aim of our body is to live in all disadvantageous circumstances, so the natural substances from our body like cholesterol, uric acid and bilirubin are allotted to do this anti-oxidation work as their extra work. The brain orders the body to produce more of these substances and they are increased in our blood without any known cause. I recommended a suitable diet for this woman for three months, then I estimated her cholesterol value, it was high, but significantly lower than before. I changed her diet little and this was continued for another three months and after that she had her cholesterol level less than 200 mg/dl which is normal. Thus I have identifier the reason for the elevated value of cholesterol which the medicines could not control for several years. This was the knowledge 25 years ago about cholesterol.
The conclusion is that fresh food is important for our healthy life, without which sports and other physical activities will not help us always to become healthy. Eat less processed food, but everyday you must eat fresh vegetables and fruits, the standard amount for an adult is 300 to 400 g fresh vegetables and 400 g of fresh and ripe fruits.
